Valle de Guadalupe is Mexico’s most celebrated wine region. Located in Baja, California, just 90 minutes from San Diego, the rustic and fascinating area boasts around 150 wineries, producing the majority of Mexico’s vintages.

Travelers can find plenty of stay options in Valle de Guadalupe, ranging from ultra-luxury resorts to boutique hotels, glamping, cozy retreats and tranquil vineyard villas depending on the desired vibe (romantic, rustic, upscale, eco‑friendly, and more).

Though I’ve stayed at other venues in the region, my recent stay at El Cielo Resort was ideal for what I was looking for on this visit: luxury and pampering.

Staying at El Cielo

The setting couldn’t be more ideal for 95 luxurious suites encircling a picturesque lake against the backdrop of rugged mountains surrounded by verdant vineyards. The design of the resort is Tuscan-Californian style and it works well here in wine country. El Cielo means “sky” or “heaven” in Spanish, and a stay here is definitely heavenly.

Guests can book a junior suite with a king or two-queen beds, a master suite, or reserve an entire residence that includes the master on the ground floor and two junior suites on the second level. An executive three-bedroom villa is ideal for families or friends traveling together. The extravagant Presidential Villa is impressive.

Those who love traveling with their furry friends will be delighted that the resort is pet friendly.

I was delighted by my a stay in a master suite including a fully-equipped kitchen, living room, dining room, gas fireplace, two full baths, and a king bedroom. The master bath featured a spa-jetted tub that overlooked the vineyards (accompanied by bubble bath). An outdoor patio offered comfortable seating around a fire pit, available only to master suite or entire residence guests. Junior suites do however, offer an outdoor balcony.

The property features an outdoor pool with plenty of seating, ideal for cooling down on a warm Baja day, along with a full fitness center.

Because the resort is a popular setting for weddings, there is a stunning chapel on site that’s also open to those wanting to attend Catholic mass. Just outside the chapel, a terrace offers stunning views of the resort, lake, mountains and vineyards.

Dining at El Cielo

El Cielo is a culinary haven and restaurants on property offer an amazing selection of delights for the food lover.

Latitud 32

Signature restaurant Latitud 32 earned a mention in the 2024 Michelin Guide Mexico. The chic, classy indoor-outdoor venue open for breakfast, lunch and dinner serves a delightful, delectable Yucatán-Baja fusion menu that tantalizes the palate. Outdoor tables provide stunning views of the valley’s landscape.

The rustic, but elegant indoor setting includes high ceilings, stone and brick-lined walls and floor-to-ceiling glass windows and doors. Service is exceptional and if you’re looking for wine-pairing selections, servers here are extremely knowledgeable.

Polaris Restaurant

This second-floor restaurant at the El Cielo Winery stands out for its haute cuisine and cozy atmosphere. Focusing on seasonal products, the breakfast-only restaurant features impressive weekend buffets and a la carte selections throughout the week.

Other Dining Experiences

Resort guests can also select other not-to-be missed dining experiences that include Dining Under the Stars Terrace with a fun and festive barbeque theme and a private, intimate romantic candlelight multi-course tasting dinner with wine pairing at Enoteca.

A private outdoor gazebo is also available for that special dinner occasion be it “popping the question” or celebrating a special wedding anniversary.

Wine Tasting Adventures

I call these “adventures” versus “experiences” because they are special ways to enjoy El Cielo’s award-winning wines and the impressive vineyards.

Winemaker Jesús Rivera and his talented team have produced varietals for every type of palate including mineral and sparkling whites, tantalizing rosés and bold reds.

Wine labels sport astronomically themed names such as Andromeda, Cassiopeia, Capricornius, Galileo, Hypatia, Orion, and more, all paying homage to the constellations of the universe.

The Astros line features young wines and varietal blends characterized by fresh flavors, fruity expressions and elegance. The Astronomers line was inspired by old-world style wines with the Mexican terroir touch – classic blends reflecting classic grapes produced in a new-world style.

Constellations Line showcases New World wines through innovative blends while the G&G by Ginasommelier Line was born from the vision of the impressive, world-renowned Sommelier Gina Estrada and estate co-owner Gustavo Ortega designed to tempt and delight the palate. Stars Line represents El Cielo’s premium collection, considered the best oenological gems of Mexico’s quality wines.

Biking and Golf Cart Rentals

If you’re into exploring on your own, the resort offers golf cart tour rentals of the vineyards owned by El Cielo Resort with your family or friends to admire the landscapes, orchard, olives and vines. Bikes are also available to rent.

Wagon Tour

Hop on a wagon ride around the vineyards, where your expert guide explains the process of winemaking, the history of Valle de Guadalupe and El Cielo winery while tasting three different wines. A barrel grape-stomp adventure can be added to this tour.

Wine Cellar Tour & Tasting

There’s just something about the scent of a wine cellar surrounded by the coolness of an underground barrel room. After a vineyard tour, a certified sommelier guides wine aficionados through the fermentation tank and barrel areas before heading to a private, low-lighted area of the cellar to taste five different El Cielo wines.

Build Your Own Wine

In a separate cellar experience, guests can blend their own wines with their own private label with the guidance of a sommelier and fermentation team. It’s like being back in a chemistry lab, but a whole lot more fun!

Terrace Tastings

This is an opportunity to wine taste surrounded by picturesque vineyards. Visitors can choose from three different tastings to match their wine preferences with an expert sommelier explaining the wine making process and unique characters of each wine.

Wine and Chocolate Pairing

If you’ve never paired wine with chocolate, it’s a great experience. At El Cielo however, guests don virtual reality goggles as they’re walked through the tasting process, making the activity even more adventurous and exciting.

El Cielo Getaway

Italian astronomer, physicist and philosopher Galileo Galilei once said, “Wine is sunlight, held together by water.”

In a place that magically combines the elements of sunlight, stars, natural landscapes, water and wine in a magnificent setting, El Cielo provides the ideal dreamy Baja wine country escape. One that visitors won’t soon forget.
